Do You Have A Passion For Passionfruit?

It’s that time of year again – passionfruit season! This year our garden is overflowing with ripe, fragrant passionfruit. There’s something very satisfying about walking outside and collecting the purple fruits, ready to eat fresh with a spoon, or to transform them into delicious treats. If you’re also blessed with a bountiful passionfruit harvest, or just love this tropical fruit, I’ve got a few of my favourite passionfruit recipes to share with you. These recipes are simple, versatile and delicious – whether you’re after a refreshing breakfast, a dressing with a zing, or a smooth tangy dessert.

1. Passionfruit Chia Pudding

A tangy tropical, nutritious breakfast or snack.

Ingredients:

  • 1 cup canned coconut milk (or almond milk for a lighter version)

  • 1/2 cup passionfruit pulp

  • 2 tablespoons chia seeds

  • 1 tablespoon maple syrup or honey (optional)

Instructions:

  1. In a bowl, whisk together the coconut milk, passionfruit pulp, and sweetener (if using).

  2. Stir in the chia seeds and mix well.

  3. Let the mixture sit in the fridge for at least 2 hours or overnight to thicken.

  4. Serve chilled, topped with fresh fruit (it's really yummy with raspberries and/or strawberries), coconut flakes, yoghurt, or granola for added texture.



2. Passionfruit Salad Dressing

If you're looking to elevate your salads or even grilled vegetables, this passionfruit salad dressing is a game-changer. It’s zesty, slightly sweet, and so incredibly easy to make.

Ingredients:

  • 1/4 cup passionfruit pulp

  • 1 teaspoon honey or maple syrup (optional)

  • 2 tablespoons olive oil

  • 1 tablespoon apple cider vinegar or lemon juice

  • Salt and pepper to taste

Instructions:

  1. Whisk together all the ingredients in a small bowl or shake together in a jar until smooth.

  2. Drizzle over your favourite salad, or even use it as a dressing for grilled vegetables or a side dish.




3. Passionfruit Flummery

Have you ever heard of a flummery? This Passionfruit Flummery is a must-try. Here I share my adapted gluten-free version, from Margaret Fulton's original recipe in 1968. It’s the perfect dessert for summer or any time you want something light but indulgent.


Ingredients:

  • 1 tablespoon powdered gelatine

  • 1/2 cup cold water

  • 1 dessert spoon of gluten-free corn flour (cornstarch)

  • 1/4 - 1/3 cup sugar, honey, or maple syrup (sweetener of your choice)

  • 1/3 cup fresh squeezed lemon juice

  • 2/3 cup hot water

  • 1/2 cup passionfruit pulp

Instructions:

  1. In a small bowl, sprinkle the gelatine over the cold water and let it sit for 5-10 minutes to bloom.

  2. In a separate saucepan, combine the corn flour, sweetener, and lemon juice, blending them to make a smooth paste. (I use my Thermomix for a smooth, easy process).

  3. Add the hot water, bring to the boil, stirring constantly until the mixture slightly thickens.

  4. Add the bloomed gelatine mixture and stir until fully dissolved.

  5. Allow the mixture to cool. When it begins to set, whisk it until thickened and doubled in volume.

  6. Stir in the passionfruit pulp and whisk again.

  7. Pour the mixture into serving dishes or a large bowl, then chill in the fridge and allow it to set.

As you can see, there are so many ways to enjoy passionfruit, whether it’s in breakfast bowls, zesty dressings, or smooth desserts. Passionfruit is such a versatile fruit that pairs beautifully with many flavours, making it easy to get creative in the kitchen.
